A cutting board is the one kitchen tool you touch every single day, and the one most people replace every two years because they bought a flat-glued edge-grain board and it split.

This one is built end grain: 312 individual walnut blocks stood on end and glued face to face, so the surface you cut into is the open end of the wood fibre. The blade parts the fibres and they close again. That is why end-grain boards are gentler on knives and why they do not develop the permanent knife scars that trap moisture and bacteria.

Black walnut was chosen over maple for hardness in the right range. At 1010 lbf on the Janka scale it is hard enough to resist gouging but softer than hard maple (1450 lbf), which means it is kinder to a Japanese blade at 15 degrees. It is also closed-grain, so it absorbs less liquid than oak.

Construction: 312 blocks, titebond III waterproof food-safe adhesive, 1.5 in finished thickness, hand-sanded to 220 grit, chamfered edges, finished with food-grade mineral oil and beeswax. Four recessed silicone feet. Two integrated finger grips on the short sides so you can lift 8.4 lb without pinching it against your body.

What it is not: it is not dishwasher safe, it is not suitable for being left wet, and it is not the right board if you want something you can throw in a drawer. It is a 20-year board that asks for five minutes of oil a month.

**Will it warp?**

Not if you dry it standing on edge and re-oil monthly. Warping in end-grain boards comes from one face drying faster than the other, which is exactly what happens when a wet board is left flat on a counter. The silicone feet exist for this reason.

**Is walnut safe for food?**

Yes. Black walnut is a closed-grain hardwood with no food-safety restrictions. The tree-nut allergen concern applies to the nut, not the timber; no walnut protein is present in the wood.

**Can I cut raw meat on it?**

Yes, on the grooved side, then wash with hot soapy water. Wood is not less hygienic than plastic — its capillary action draws bacteria below the surface where they die off, whereas plastic knife scars hold them at the surface.

Most knives sold as 'Damascus' are a pattern etched onto a single piece of steel. This is not one of those. The blade is three-layer san-mai: a VG-10 stainless core hardened to 61 HRC, wrapped in 33 layers of softer stainless on each side. The wave pattern you see is where those layers meet. If you sharpen it down over ten years, the pattern is still there, because it is structural.

Why VG-10: it holds an edge close to carbon steel while staying stainless, which matters if you are not going to oil a knife after every use. At 61 HRC it is meaningfully harder than the 56 to 58 HRC of most European chef knives — roughly twice the edge retention in practice — and it accepts a 15 degree bevel that softer steels will not hold.

The trade-off is honest and worth stating: hard steel chips. If you scrape a 61 HRC blade sideways across a board to sweep onions, or cut into a chicken bone, you will take a piece out of the edge. **How often does it need sharpening?**

Hone on a ceramic rod weekly, sharpen on a whetstone every 4 to 6 months with daily home use. At 61 HRC it holds roughly twice as long as a 57 HRC European knife between sharpenings.

**Can I sharpen it in a pull-through sharpener?**

No. Pull-through sharpeners are set to around 20 degrees and will grind away the 15 degree bevel, and their carbide wheels tear hard steel. Use a 1000/6000 whetstone or a professional service.

Pre-ground pepper loses most of its aromatic oils within about thirty minutes of grinding. That is the entire argument for owning a mill, and it is why the grinding mechanism is the only part of a pepper grinder worth paying for.

This one uses a ceramic burr rather than the hardened carbon steel found in cheaper mills. **Can I use it for salt?**

Yes. The ceramic burr is inert and will not corrode. Use coarse sea salt or rock salt, not fine table salt — fine salt packs and clogs any burr mill.

**Why is my grind inconsistent on the coarsest setting?**

Coarse settings on any burr mill produce a wider particle spread by design; the burr is cracking rather than milling. If you need uniform coarse pepper, use setting four rather than six and grind slightly longer.

**Is the wood collar dishwasher safe?**

No, and neither is the body. Water gets into the acacia and into the chamber, where it will cake the pepper. Wipe the outside with a damp cloth and tap the mechanism over a bin to clear it.
